An ode to Il Pastaficio and Fresh pasta

When it comes to Italian you know when it is fresh and when it tastes over done; in other words you know if it is actually good or if it is just another American Take on an Italian Delicacy. Il Pastaficio is not in Italy, but it is pretty close to the real deal. This is no Doppio. They make their pastas, lasagnas, sauces, meatballs, desserts fresh daily and have a few seating options, but mostly sell their pre-made food to people in a rush.

Two things I am consistently blown away with are their meatballs and pesto sauce on spinach and ricotta ravioli. Their meatballs are lathered in a tangy tomato sauce, and elevate your traditional meatball to an oozing ball of protein and spices. I sometimes just eat their pesto on its own. It is cheesy yet fresh and pairs nicely with the ravioli.
When I do have fresh pasta over the traditional grocery store penne one of the main bonuses is that the cook time is only 2-3 minutes. Therefore, my impatient self is only hangry for a short amount of time rather than 10 or twelve minutes. The most anxious part is waiting for the water to boil. Make the switch.
